Freezer Breakfast Burritos



Need a quick breakfast idea for when you’re running out the door? I would rather prep a batch of something for breakfast and freeze it rather than stopping at the drive-thru.  These breakfast burritos are the perfect solution.  The fact that you can literally use whatever ingredients you want AND prep it all in the microwave is just the cherry on top.  I use this recipe as a perfect fridge or freezer clean-out.


Freezer Breakfast Burritos

  • Package of burrito-size wraps (I love using spinach flavor or sundried tomato)
  • 6 large eggs
  • 1 cup Frozen vegetables of your choice (I had a bag of Ranchero vegetable mix, so I used that. It has peppers, carrots, broccoli, and beans in it)
  • cooked sausage links (optional)
  • ¼ cup milk
  • Package of taco seasoning

1.       Cut pieces of parchment large enough to fit each open burrito wrap.
2.       Dump all the veggies in a microwave safe dish. Microwave on high for 2 minutes, stir, then put back for another minute. Drain veggies and set aside. (Draining the vegetables after they cook is SUPER important if you don’t want a soggy burrito when it gets warmed up.)
3.       In another microwave safe bowl, crack the eggs and add the milk and taco seasoning.  Scramble the mixture and microwave in 1 minute intervals until it sets.
4.       Add the egg mixture to the veggies and microwave one more minute just to incorporate the taco-seasoned egg mixture with the vegetables
5.       Scoop a few spoonfuls of the mixture into the center of each wrap. Sprinkle with cheese.
6.       Fold in the ends of the wrap and roll up. Wrap each burrito in the parchment it was prepared in.
7.       Freeze in freezer-safe container or freezer bag.

When it’s time to cook them, there are two ways to do it.  I use my toaster oven and cook it in the parchment (no clean-up!) at 350⁰ or 12-15 minutes. If you need it faster than that, zap it in the microwave for 2 minutes on each side.




These things are definitely lifesavers, especially when you’ve gotten the kids all ready and thought “oh, crap. I didn’t eat anything.” Enjoy!
