I'm BAAAACCCKKKK!


Hi everyone!  I know it’s been quite a while since I’ve posted.  At the risk of sounding like a certain recently hospitalized popstar (who I’ll be pretty disappointed if it wasn’t an accidental OD) I’m sorry, NOT SORRY!  I was taking some time for myself and my family, and genuinely apologizing would mean I felt I was wrong in doing so, which I don’t. Honestly, I have a very tough time staying motivated to do ANYTHING in the summer (seriously, don’t come to visit. I have no A/C and zero ambition to sweat my ass off cleaning). But I’m back now and I have a ton of new material coming up this month, most of which is stuff I was preparing for during my time off. So stay tuned every other weekday for new posts! I promise they’re on their way!

Have you ever noticed a child playing alone with their toys? Try and observe one day. New Recipe: Thai Pumpkin Soup

Hi everyone! Fall weather is in full swing in New England, which means it's soup season!! I love soup, but I'll only eat it when the weather gets cool enough for sweaters and boots. A couple weeks ago when the weather first changed, I was thinking of using a new recipe because I was sick of the same old beef stew/tomato soup and grilled cheese/canned chowder. I love butternut squash soup, so I thought I'd be even more seasonal and use pumpkin. My husband loves spicy food, so I thought Thai Chili would be the way to go. I have a jarred sauce that I buy at the supermarket that is sweet and spicy and delicious, and since the flavor is well-rounded, I used some of that in the soup. It was almost as quick and easy to make as the kind in a can, and it's absolutely delicious.  In fact, I am currently sipping some of this soup as I'm typing. Recipe Mashup: Chicken Cordon-Bleu Alfredo Casserole

Chicken Cordon-Bleu Alfredo Casserole While I admit this dish is not even remotely healthy, it is a quick one that is easy to make ahead so you can just throw it in the oven on a busy weeknight. This recipe came to me on a recent trip to my local BJs, where they were demo-ing some frozen chicken cordon bleu cutlets.   I realized I hadn’t made them in a while, so I grabbed some chicken breasts while I was there. Lo and behold, when I opened the package I noticed they were too thin to stuff, but I still wanted to make it.   So I thought I’d make it into a casserole. I also realized I hadn’t made chicken alfredo in a while, so I decided to mash up the two.
